Easy Sausage Gravy and Biscuits Recipe

This thick, creamy sausage gravy isn’t complete without flaky, buttery biscuits to spread it on. It’s one of our favorite Saturday morning breakfast recipe in our farmhouse. My 7 year old son asks for it every year on his birthday and our other children absolutely love it.

I was determined to find the perfect sausage gravy and biscuit combination for the perfect breakfast. I don’t know about you, but I’ve had plenty of failed biscuit recipes. Too dry, melting butter all over the baking sheet, you name it.

After lots of testing and recipe tweaking, I finally developed the perfect old-fashioned biscuits. These biscuits are loaded with butter that stays put, making them perfectly flaky and tender, while rising high because we aren’t skimping on the baking powder! You will absolutely love this breakfast combination.

Ingredients

Ground breakfast sausage
All-purpose flour
Whole milk
Salt & pepper

Tools You Will Need

Heavy bottom pot – I use my dutch oven or cast iron skillet for this recipe.
Measuring cups – I prefer these for measuring out liquids

How to Make This Easy Sausage Gravy Recipe

Step 1 – Brown your ground sausage (1 pound) in your skillet. Once browned, coat with flour (1/3 cup, 42 g). Cook the coated sausage on medium heat for 3-5 minutes, stirring occasionally.

Step 2 – To your flour and sausage mixture add in half of the milk (2 cups, 488 g). Stir well and allow it to come to a simmer. Once it begins to thicken, pour in the remaining milk (2 cups, 488 g). Repeat the process of bringing it to a simmer.

Step 3 – Once thickened, turn your heat down to low. Season your sausage gravy with salt (I recommend about 1 tsp) and pepper to taste. Serve over homemade biscuits and enjoy!

Tips for making the best sausage gravy recipe

  • When thickening your gravy, watch it carefully to make sure it doesn’t boil as not to have it burn on the bottom.
  • Give the gravy time to thicken. It may seem like it is too runny, but once it begins to bubble it will thicken quickly, so avoid adding more flour.
  • Don’t rinse the sausage fat. It’s important to leave it so that flour has something to bind to.

If you are making this as a breakfast gravy, I recommend using a breakfast flavored sausage like maple, sage or original breakfast flavor. If you are making this as a dinner gravy, regular ground sausage is fine.

No, do not rinse the fat. The fat is needed for the flour to create a roux and thicken the milk.

Give it time. Sometimes it takes the gravy a little longer to thicken up depending on the heat level of your burner, thickness of the pot, and so on. The gravy will also continue to thicken as it cools.

I recommend sticking to whole milk for this recipe as the higher fat percentage is needed for a thick, creamy gravy.

Yes, you can freeze it. I recommend freezing in an airtight container for no more than 1-2 months. Also note the cream may separate when thawed.
