Simple Homemade Mayo

Summer is around the corner which means all sorts of cold salads, sandwiches and the usual delicious warm weather foods. If you want a way to level up your from scratch summer food (really all year long), you will love this simple homemade mayo.

Ingredients
  

  • 1 cup avocado oil 218 g
  • 1 tbsp dijon mustard about 16 g
  • 1 egg fresh
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • juice of one lemon

Equipment

  • Mason jar
  • Immersion blender

Method
 

  1. Measure out avocado oil (1 cup, 218 g) into a pint-sized mason jar.
  2. To the oil add egg, dijon mustard (1 tbsp, about 16 g), juice of one lemon, salt (1 tsp), pepper (1/2 tsp) and garlic powder (1/2 tsp).
  3. Lower your immersion blender into the oil until it sits just above the egg at the bottom of the jar. Then begin blending and work the immersion blender up and down until a thick mayonnaise forms.
  4. Cover with a lid and refrigerate for up to 5 days. Use as a 1:1 replacement for store-bought mayo and enjoy!

Notes

Recipe Tips
  • If you have backyard hens, make sure to use a super fresh egg for this recipe or it may not whip up properly
  • In a warm kitchen, the mayo may not thicken up as well. If you want your mayo to be super thick, just pop it in the fridge after blending and it will thicken as it cools.
  • This simple homemade mayo doesn’t have a long shelf life, so make sure to use it up within a few days!
 
Substituions
Avocado oil – you can use olive oil in place of avocado oil, although some don’t prefer the strong olive oil flavor we make this substitution often and enjoy it
Lemon juice – if you do not have fresh lemon juice, use a tbsp of bottle lemon juice or white vinegar
Dijon mustard – if you don’t have dijon mustard on hand you can use regular mustard
