Method
- Measure out avocado oil (1 cup, 218 g) into a pint-sized mason jar.
- To the oil add egg, dijon mustard (1 tbsp, about 16 g), juice of one lemon, salt (1 tsp), pepper (1/2 tsp) and garlic powder (1/2 tsp).
- Lower your immersion blender into the oil until it sits just above the egg at the bottom of the jar. Then begin blending and work the immersion blender up and down until a thick mayonnaise forms.
- Cover with a lid and refrigerate for up to 5 days. Use as a 1:1 replacement for store-bought mayo and enjoy!

Lemon juice – if you do not have fresh lemon juice, use a tbsp of bottle lemon juice or white vinegar
