What makes this simple homemade mayonnaise different?

Most store-bought mayonnaise brands use seed oils as well as additives in their mayo that aren’t very good for us. They do this to save on costs and make their product shelf stable.

A simple homemade mayo is made with just a handful of fresh, high quality ingredients and it’s obvious in the taste. I never liked mayo growing up and wouldn’t touch it, but I absolutely love this homemade version.

Avocado oil
Egg
Lemon juice
Dijon mustard
Salt, pepper and garlic powder

How to Make This Simple Homemade Mayo Recipe

Step 1 – Measure out avocado oil (1 cup, 218 g) into a pint-sized mason jar.

Step 2 – To the oil add egg, dijon mustard (1 tbsp, about 16 g), juice of one lemon, salt (1 tsp), pepper (1/2 tsp) and garlic powder (1/2 tsp).

Step 3 – Lower your immersion blender into the oil until it sits just above the egg at the bottom of the jar. Then begin blending and work the immersion blender up and down until a thick mayonnaise forms.

Step 4 – Cover with a lid and refrigerate for up to 5 days. Use as a 1:1 replacement for store-bought mayo and enjoy!

In a pint sized mason jar or 2-cup measure glass measure out oil and crack in one egg.

Add mustard, lemon juice, salt, pepper and garlic powder to oil.

Substitutions

Avocado oil – you can use olive oil in place of avocado oil, although some don’t prefer the strong olive oil flavor we make this substitution often and enjoy it
Lemon juice – if you do not have fresh lemon juice, use a tbsp of bottle lemon juice or white vinegar
Dijon mustard – if you don’t have dijon mustard on hand you can use regular mustard

  • If you have backyard hens, make sure to use a super fresh egg for this recipe or it may not whip up properly
  • In a warm kitchen, the mayo may not thicken up as well. If you want your mayo to be super thick, just pop it in the fridge after blending and it will thicken as it cools.
  • This simple homemade mayo doesn’t have a long shelf life, so make sure to use it up within a few days!

Most of these ingredients can be bought at your local grocery store, but these are my favorite places to purchase them

Avocado oil – You can find affordable avocado oil at Walmart or Aldi, or if you want to purchase in bulk you can buy it in larger quantities from Azure Standard.

Eggs – Because this recipe contains a raw egg, I prefer to make sure I source them from a high quality source. We get our eggs from our own backyard chickens, but you can probably find local eggs if you don’t have hens of your own.

Salt – While any salt will work, I love using a high quality, mineral rich salt like this one from Redmond Real salt.

Lemon juice, mustard and spices – Source from your local grocery store or wherever you prefer to shop.

Yes, this homemade mayo is healthy! Much healthier than the highly processed versions you will find in the stores, this mayo is made with only simple, clean ingredients.

Can I make this ahead?

You can make this a day or two ahead yes. I like to do this if I am prepping a cold salad to take somewhere like potato salad or coleslaw. However, I would not waiting too long to use it as fresh, homemade mayo doesn’t have a super long shelf life.

What is the best way to store it?

In a jar with a tight fitting lid in the refrigerator for up to 5 days.

Can I sub olive oil for the avocado oil?

Yes, you can definitely sub olive oil for the avocado oil. I have heard some people say they don’t like the taste of homemade mayonnaise with olive oil, but we don’t mind it one bit.
